Pineapple Passion Fruit Biscuits

For the batter:

120 g soft butter or margarine

100 g sugar

1 pinch of salt

2 egg yolks

120 g wheat flour

80 g cornstarch

1 teaspoon baking powder

1/2 pck. (26g) cold peel pineapple-passion fruit flavor

2 tablespoons lemon juice

 

  1. For the dough, whisk butter or margarine with a hand mixer with whisk at highest speed until smooth
  2. Gradually add sugar and salt and stir until the dough has formed a bound mass. Stir in the 2nd egg yolk bit by bit (each egg yolk just under 1/2 minute). Mix flour with cornstarch and baking powder and sieve. Mix in cold shell. Stir the flour mixture in 2 portions briefly into the butter-egg yolk mixture at medium speed. Stir in lemon juice.
  3. Place the dough in heaps on baking trays (covered with baking paper) with two teaspoons. Push the baking trays one after the other (together in hot air) into the oven. Top/bottom heat: about 180°C (preheated). Hot air: about 160°C (preheated). Gas: level 2-3 (preheated). Baking time: 15-20 minutes per baking tray.
  4. Pull the biscuits with the baking paper from the baking trays onto cake racks and let the biscuits cool down.
